Cranberry Salad is the perfect accompaniment to any Holiday meal.  Thanksgiving might be yesterday’s news but don’t button up those pants too soon!  We have 2 more big meals to go!

You will want this on all your Holiday Tables! This Cranberry Jello Salad is as easy as one, two, three!  You can whip it up the morning of the meal or make ahead, either way you are going to love how quick it comes together.  Our family is divided on cranberry sauce at the table.  Half love it, the other half still have nightmares whenever it’s mentioned.  Although everyone agrees that this Cranberry Jello Salad is so tasty they want it time and time again!

Cranberry Jello Salad

Cranberry Jello Salad

Ingredients

  • 2 packets of cranberry jello
  • 2 cups boiling water
  • 1 10oz can of whole cranberries
  • 1 10oz can crushed or cubed pineapple drained
  • 1 container cool whip thawed
  • 8oz of cream cheese softened
  • 2 tbsp sugar
  • juice and zest of 1 lemon

Instructions

  1. boil the water
  2. in a bowl mix the cranberry jello packet into the boiling water set aside to start to cool off
  3. in the dish you are going to serve from place the whole cranberries {you might have to spread them around} and the drained pineapple
  4. pour the jello over and push down any fruit that might have started to float
  5. chill for a hour or until set
  6. cream the cream cheese and sugar with a mixer
  7. squeeze a bit of lemon juice
  8. fold in the cool whip stir until combined
  9. spread onto the set jello
  10. grate the lemon zest on top
  11. chill for another hour
